Vegan Mayonnaise
I never knew making Mayonnaise at home was sooo easy but now i know, its a matter of 5 minutes, even kids can make it, its that simple and plus u save tons of money u spend on dips and spreads, i tried garlic flavor for this one, but it can be made with any and every flavor u like and want, just keep it limited to one or two, dont go too crazy with this one otherwise it will loose the basic texture and flavor...
Ingredients:
1 cup Soya Milk
2 1/2 cups of Oil (Any one of Sunflower/Saffola/Olive/Any Vegetable Oil)
2 cloves of chopped Garlic (Do not add more since this much is enough for flavor)
1 tsp of Salt
1 tbsp Powdered Sugar(Preferably regular White sugar) or Equivalent amount of Sugarfree or any other sweetener
2 tsp Vinegar or Lemon juice
Method:
1. Put Soya Milk in the blender or in a less wide bowl with a hand blender, dont take a bowl thats too wide just about enough to fit the bottom of the hand blender will be ennough otherwise u wont be able to see the magic... Whisk for 4-5 seconds...
2. Add the garlic and oil in the blender and whisk again for 4-5 seconds, you'll see the magic happen and the mixture will start to thicken, once its slightly hard to move, stop.
3. Add the rest of the ingredients like salt, sugar and vinegar. Whisk again for 4-5 seconds, the mixture will be of mayo like consistency now, and it will literally stop moving. Turn the blender off.
4. Transfer the contents to an airtight container and store it in the fridge, it will keep well for about a week or more depending upon the storage conditions.
Tips:
1. Always use a dry spoon to extract the mayo from the bottle.
2. If u see the oil coming on top in a few days, just whisk it for a few seconds again in the blender it will be ready again.
3. For Other Flavours, inspite of the garlic, try adding 2 tsp of tomato ketchup, or finely chopped white onions or shallots or carrots at the last step, the list is endless...
