My Secret Pasta Recipe
Its not such a big secret recipe, just a colorful twist to the traditional white sauce pasta...
Now the quantity is very rough, it serves about 4-5 people, if u want to make it for more or less people then increase or reduce the amount of the ingredients used, i usually dont measure the ingredients so please adjust them as per your taste...
So the ingredients that you need are..........
Pasta/Macaroni, the traditional c shaped pasta.... about 2 cups...
Olives preferably black.. about 4-5 cut into rounds...i.e. O shape...
Some American corn... about 1 cup is enough..
Some Capsicum/BellPepper(Any colour can be used Green, Red, Yellow)... about 1-2 large size is enough...
Milk 750 ml...(u can also use amul fresh cream small packet if u want in addition to the milk)
White Flour or Maida.... about 3 tsp...
Garlic chopped about 6-7 cloves, the more the better...
Chilly flakes about 2-3 tsp...u can also use black pepper instead but then the beautiful white colour of the sauce is gone...
Oregano about 2-3 tsp...
Grated Cheese to taste(i use about 1 cup)
Butter to taste(i use about 1 tbsp)
Salt to taste
Sugar to taste(just about 1 tsp, not more than that)
Method:
Take a large vessel full of water about 2 bottles of water, put in about 1 tbsp of salt and a tsp of oil, and heat it till it reaches a boiling point, put in the pasta and cook for about 10 minutes or as is mentioned on the pasta packet..
once its done, take it out on a strainer/sieve and run through cold water... keep it aside...
Boil american corn in salted hot water till they are soft and keep aside...usually takes about 8-10 minutes... u can also use green peas here...
Heat the butter in a pan on low heat, put in the chopped garlic and roast it till it becomes yellow in color remember not to burn it by browning it, now add maida and roast it for 2-3 minutes, once that is done add the boiled milk and stir the mixture continuously while cooking it on medium flame... for about 5-6 minutes...
once u see that the mixture is a bit thick in texture, stir in the cut olives(optional), boiled corn or peas, capsicum cut in julienne/thin long strips, the cooked pasta, salt, sugar, chilly flakes, Oregano, lower the heat and boil this mixture for about 4-5 minutes stirring occasionally, stir in the cream if u have it(u can also add a tbsp of milk powder if u have instead of the cream) and lots of grated cheese... turn off the heat and stir the cheese in the pasta properly... no need to boil it now, if the mixture is too thick u can add some milk to it or if its too thin then u need to boil it for 2 more minutes...
leave it like that for a minute or two, so that the cheese mixes in the sauce well, dont cover the pan here...
Now serve...its sure to tickle everybody's taste buds
