Banana Bread
Wow, I am in Love with this bread since the first time i baked it, thereafter i tried it with various ingredients and combinations but this combination works perfectly well everytime, it is insanely simple but u have to make sure u follow the recipe well. Happy Baking!!!
Ingredients:
1 cup Maida or All Purpose Flour
1/2 cup Gehun ka Atta or Wheat Flour
1 stick Amul Butter(at Room Temperature) or see Tips*
1 tbsp Oil(Sunflower, Rice Bran, Olive, any one)
2 tsp Vanilla Essence
2 to 3 mashed medium size Bananas(Preferably Overriped)
2 tbsp Tutti Fruity or indian cherries or fruit bits or walnuts(Optional)
1 tbsp Vinegar or 1 tsp Lemon Juice
1&1/2 tsp Baking Powder
1/2 tsp Baking Soda or Soda Bi Carb(Easily available at a local medical store or chemist)
1/2 cup Powdered Sugar (Brown or Regular White)
Method:
1. Sift both the flours through a sieve alongwith the baking powder and soda.Keep Aside.
2. Mix Butter and Sugar, beat for a minute, add the Vanilla essence, mashed Bananas, vinegar(or 1 tbsp water+Lemon Juice), and Oil and Mix Well.
3. Add the sifted flour mixture and tutti fruity to the above liquid and slowly mix with a spatula or spoon, dont overmix.
4. A sticky but a little thicker than a cakemix mixture will be formed, add a little more oil about 1 tbsp if u think the mixture is too dry or thick.
5. Transfer the mixture to a bread loaf tin or any other baking pan suitable to your oven and bake at 180 degrees for 45 minutes.
6. Put a clean knife or a toothpick in the centre and in the sides of the bread to see if its baked evenly, if the toothpick comes out clean its done, if it comes out with batter coated over it, bake at same temperature again for 5-10 minutes and check similarly.
7. Once done, take the loaf out and cool on a wire rack for 15 to 20 minutes.
8. Resting time is extremely important since its possible that the bread may break while cutting if its not cooled enough.
Tips:
*any 1/2 cup White Butter or Margerine or Vegetable Oil
1.If u dont have or find baking soda or want to omit it for health reasons, simply dont add it but also dont add the vinegar then, if u still add the vinegar without the soda then ur bread wont rise the way u want it.
2.Yes its a bread, but believe me, i have tried it with yeast, but it wasnt that good and also it gave that yeasty after taste that is so undesirable.
3.I have tried it with only wheat flour and multigrain flour but still not satisfied with the end product, the above given combination works the best.
4.If u want a more light and fluffy texture u can include one or two beaten eggs in the second step.
